Antioxidant Green Smoothie

This is a superfood drink providing lots of antioxidants in food form. Have it for breakfast or as a mid-meal snack.
The lime, ginger and mint are a key to the good taste so don’t leave them out. Avocado is needed for richness and consistency. Otherwise, some adaptations can be made according to what you have available.

Blend the following ingredients together in a large blender or in a Magic Bullet:

1 cup coconut water (make sure it’s an unsweetened, 100% coconut water)
juice of 1 lime
1/2 c parsley (preferably organic)
10 – 14 leaves of mint (preferably organic)
1 tb coarsely chopped ginger (peel it first)

1/8 tsp. Himalayan or Celtic sea salt (or another fine quality of naturally dried salt)

After this is well blended, add and blend:

approx. 5″ cucumber, in large slices

After the cucumber is well blended, add and blend:

3 leaves of kale or 3/4 c spinach or arugula (leafy greens should ideally be organic because of vulnerability to pesticides)

Blend well. Then, as a final addition:

1 small or 1/2 large avocado

optional to up your protein intake:
1 tb. unsweetened natural whey isolate (my preference is Ergogenics New Zealand Whey – any other cross-flow microfiltrated whey will do)

Blend to desired consistency and drink.
Makes 24 oz.
